(Photo: Daniel Nee)<\/p><\/div>\n<p>After working to grow their <a href=\"http:\/\/www.xinarestaurant.com\">Xina<\/a> sushi and Chinese bistro into one of the Shore\u2019s most successful eateries, the Lee family is expanding \u2013 this time on the opposite side of Barnegat Bay.<\/p>\n<p>Family members and friends gathered Tuesday to celebrate the opening of <a href=\"https:\/\/www.facebook.com\/freerangerestaurant\/\">Free Range<\/a>, the family\u2019s newest restaurant and brainchild of Rick Lee, who said the new establishment fulfilled a long time dream of opening a more casual restaurant that specializes in sustainable and healthy foods.<\/p>\n<p>\u201cI\u2019ve always wanted to do a neighborhood coffee shop and eatery \u2013 nothing pretentious \u2013 just something comfortable, but with a conscience,\u201d said Lee.<\/p>\n<p>Free Range serves \u201cnothing that comes out of a bag and is dropped into a fryer,\u201d Lee said, and will source its ingredients from local farmers in order to ensure the freshness and healthiness of its menu.<\/p>\n<p>\u201cHaving a relationship with the farmers we deal with at Xina is excellent, and we\u2019re going to bring those ingredients to a different style of food,\u201d said Lee.<\/p>\n<div id=\"attachment_4212\" style=\"width: 650px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/lavallette-seaside.shorebeat.com\/wp-content\/uploads\/2017\/06\/IMG_8615.jpg\" data-rel=\"lightbox-image-1\" data-rl_title=\"\" data-rl_caption=\"\" title=\"\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-4212\" class=\"size-large wp-image-4212\" src=\"http:\/\/lavallette-seaside.shorebeat.com\/wp-content\/uploads\/2017\/06\/IMG_8615-1024x768.jpg\" alt=\"The grand opening of Free Range in Seaside Heights, June 20, 2017. (Photo: Daniel Nee)<\/p><\/div>\n<p>Free Range will serve fresh eggs each morning, including the signature \u201cMorning Glory\u201d dish, which combines scrambled eggs with chives, American cheese, avocado and carmelized onion on a brioche bun. Another dish, \u201cThe Boulevard,\u201d will mix soft scrambled eggs with prosciutto, arugal and spicy mayor on ciabatta bread.<\/p>\n<p>Sandwiches, served the rest of the day, include free range chicken with mozzarella, house marinated peppers, pesto, Jersey tomatoes, balsamic vinegar and greens. There is also a hot, fried chicken sandwich and pork belly with chili aioli. (Photo: Daniel Nee)<\/p><\/div>\n<p>The restaurant has been in the making for over a year, and is located in the former \u201cOn Top of Spaghetti\u201d restaurant on the Boulevard. Officials have hailed the restaurant\u2019s opening as the latest sign of Seaside Heights\u2019 revitalization \u2013 especially given the fact that a successful restaurateur chose the location for a new establishment.<\/p>\n<p>\u201cWe\u2019re very excited to have another solid building block in our rebuilding of the Boulevard,\u201d said Mike Loundy, Director of Community Improvements for Seaside Heights. \u201cThe opening of Free Range has been a couple years coming, and we think it\u2019s going to be worth the wait.<\/p>\n<p>Lee said his family purchased the property in March of 2016, knowing it would be a time-consuming effort to renovate the space and design it to his conceptual style.<\/p>\n<p>\u201cThe building was old, and after we opened up the floors, the ceilings and the walls, we knew we had to tackle a lot of the structural components too,\u201d Lee said. \u201cIt involved engineering and architecture, and was a long process.<\/p>\n<p>The restaurant will now be open daily for the summer season, and Lee said he hopes there is enough of following to remain open year-round.<\/p>\n<p>Free Range will join two other restaurants, including one relocating from Pennsylvania later this summer, that are opening on the Bulevard this season.
